How To Make Cottage Cheese Bread 

  • Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.

  • Add the cottage cheese and eggs to a blender and blend until smooth.

  • In a separate bowl, combine the flour, baking powder, and salt.

  • Pour the cottage cheese mixture into the dry ingredients and stir until combined.

  • Add the olive oil and mix until you have a smooth batter.

  • Pour the batter into the prepared loaf pan and spread it evenly.

  • Bake for 35–40 minutes, until the top is golden and a toothpick inserted into the center comes out clean.

  • Let the bread cool for about 10 minutes before removing it from the pan.

Recipe Notes 

  • You won’t taste the cottage cheese! This is the question I’m asked most often about my cottage cheese recipes. It blends into the batter and gives the bread a soft, moist texture without a strong flavor, so you don’t need to be a big cottage cheese fan to love this loaf. 

  • Low-fat or full-fat both work. Use whichever cottage cheese you prefer. Both give good results.

  • Blend the cottage cheese first. This helps create a smoother batter and a more even texture in the finished bread.

  • To make it gluten-free, use a gluten-free all-purpose flour blend in place of regular flour.

  • Check for doneness with a toothpick. Insert it into the center of the loaf. If it comes out clean, the bread is ready.

  • This bread freezes really well. Slice it first, then store in a sealed bag or container in the freezer for up to 2 months.

Storage 

Store the bread in an airtight container at room temperature for up to 3 days.

For longer storage, keep it in the refrigerator for up to 5 days.

You can also freeze individual slices for up to 2 months.
