A quick note on cooking times: I have three different slow cookers (yes, I probably have a problem) that I use to test recipes, and I’ve noticed that they can vary a fairly significant amount when it comes to how long they take to cook meals and create the best results. I know that this can be frustrating when you’re following recipes, and the only way round it is to use a little trial and error. You do quickly get a feel for your own appliance and how you might have to slightly adjust cooking times. The times stated here are a guideline, though I highly recommend keeping an eye so you can get a feel for how long your model takes!

The culinary hill that I’ll die on is that sandwiches make one of the very best dinners. This isn’t just any old sandwich though. We’re talking tender, juicy beef, savory au jus, and crusty rolls coming together to create the ultimate gourmet sandwich experience. Sounds fancy, I know, but they’re also super easy. These French dip sandwiches are perfect for when you’re making dinner for a hungry crowd, and they’re a fantastic choice for game day, football parties, and informal family gatherings.

Ingredients:

  • 3 lb chuck roast
  • 1 can (10.5 oz) beef consomme
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 6 crusty sandwich rolls
  • 6 slices provolone cheese

Instructions:

  1. Season the chuck roast with salt, pepper, onion powder, and thyme.

Beef and Broccoli is a classic for a reason—tender beef, fresh broccoli, and a savory soy-based sauce. This crockpot version makes it easy to enjoy this Chinese takeout favorite at home. We’ll add the broccoli towards the end of the cooking process to retain a satisfying crunch. 

Serves: 4

Ingredients:

  • 1 1/2 lbs beef flank steak, sliced thin
  • 3 cups broccoli florets
  • 1/2 cup soy sauce
  • 1/4 cup beef broth
  • 1/4 cup brown sugar
  • 2 tbsp sesame oil
  • 2 tbsp cornstarch
  • 4 garlic cloves, minced

Instructions:

  1. Add sliced beef, soy sauce, beef broth, brown sugar, sesame oil, and garlic to the crockpot.
  2. Cook on low for 4 hours.
  3. In the last 30 minutes, mix cornstarch with 1/4 cup water and stir it into the sauce. Add broccoli and cook for an additional 30 minutes.
  4. Serve over rice.

  1. Add beef, chiles, beef broth, onion, garlic, cumin, oregano, and cinnamon stick to the crockpot.
  2. Cook on low for 8 hours until the beef is tender.
  3. Shred the beef and serve with tortillas or in tacos.
