Serves: 6

Ingredients:

  • 2 pounds lean ground beef
  • 2 (15 ounce) cans sloppy joe sauce
  • 1 (6 ounce) box cornbread stuffing mix
  • 2 eggs
  • 1 tablespoon brown sugar

Instructions:

  1. Line the bottom of your slow cooker with foil.
  2. In a large bowl combine the ground beef, 1 can of sloppy joe sauce mix, the stuffing mix and the 2 eggs. 
  3. Once all combined form into a loaf and place into your slow cooker.
  4. Mix the remaining can of sloppy joe sauce with the brown sugar.
  5. Spoon half of the sloppy joe brown sugar sauce over the meatloaf and set the rest in the refrigerator for later. 
  6. Cover and cook on low for 4 hours. 
  7. During the last 30 minutes of cooking add the remaining sloppy joe brown sugar sauce.
  8. Garnish with parsley if you prefer.
  9. Slice and serve!

  • 2 lb of kielbasa sausage 

Instructions: 

  1. To a medium sized bowl add the honey, ketchup, brown sugar, Dijon, seasonings and apple cider vinegar and stir. Cut the kielbasa into 1 inch slices.
  2. Add the sliced kielbasa to an 8 quart slow cooker and then add the sauce on top. Stir until the sauce is coated all over.
  3. Put the lid on and cook for 3-4 hours on low, stirring every once in a while. Transfer to a pretty bowl, sprinkle with parsley (optional) and serve over rice for dinner! Enjoy. 

Crockpot Dr. Pepper BBQ Chicken Thighs

  • 6 bone-in, skin-on chicken thighs
  • 1 teaspoon salt

  • ¾ cup Dr Pepper
  • ¼ cup brown sugar
  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon Dijon mustard

Instructions:

  1. Season chicken thighs with salt, pepper, smoked paprika, and garlic powder.
  2. Heat oil in a skillet and sear chicken skin-side down until deeply golden.
  3. Transfer chicken to the slow cooker, skin-side up.
  4. In a bowl, whisk barbecue sauce, Dr Pepper, brown sugar, Worcestershire sauce, apple cider vinegar, and Dijon mustard.
  5. Pour sauce around the chicken (not directly over the skin).

  7. Remove lid during the last 30–45 minutes to allow sauce to thicken and become glossy. I like to place these under the broiler for a few minutes just to caramelize the skin a little.

  • 2 teaspoons salt, divided
  • 2 teaspoons pepper, divided

Instructions: 

  1. Place the roast in the bottom of the crockpot and coat with 1 teaspoon salt and 1 teaspoon pepper.
  2. Place the chopped onion, potatoes, celery, and baby carrots in the crockpot, tucking them into any open spaces around the roast.
  3. Sprinkle the remaining salt and pepper over the veggies.
  4. Add the beef broth to the pot. Add just enough water until the liquid fills to just under where the top of the food stops (about an inch or two). 
  5. Cover and cook on high for 4 hours or until the beef is cooked through and the veggies are fork tender. Serve and enjoy!

  3. Place the meat in the slow cooker.
  4. Stir in the sliced onion and minced garlic over the beef.
  5. In a medium bowl, whisk together brown gravy mix, onion soup mix, Coca Cola, beef broth, Worcestershire sauce, onion powder, and garlic powder until smooth.
  6. Pour the mixture evenly over the beef and onions in the slow cooker. Stir gently to coat.
  7. Cover and cook on LOW for 7–8 hours or HIGH for 4 hours, until beef is fork-tender.
  8. Thicken if needed: If you want a thicker gravy, whisk 1 tablespoon cornstarch with 2 tablespoons water, stir into the slow cooker, and cook on HIGH for an additional 15 minutes.

  4. Stir in the shredded sharp cheddar until melted and smooth. 
  5. Ladle into bowls, garnish with extra broccoli florets, cheese, or a sprinkle of black pepper if desired.

  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1 tsp salt
  • 1 tbsp tomato paste
  • 3 tbsp butter
  • 1/2 cup heavy whipping cream

Instructions: 

  • To your crockpot, add the tomato sauce, garlic, ginger paste, cumin, garam masala, turmeric, curry powder, salt, and tomato paste. Whisk this together.
  • Add the chicken and onions, and flip the chicken around to coat in the sauce.
  • Slice the butter into thin slices, and place on top of the chicken.
  • Cook on low for 4-6 hours or high for 3-5.
  • Once chicken is cooked, remove from the crock pot and chop into large chunks.
  • While the chicken is out, add in the heavy whipping cream, and stir.
  • Add the chicken back to the pot and serve over rice.
