Viral Grillo’s Pickle Dip
As soon as I saw this Grillo’s pickle dip on TikTok I just knew it was one that I was going to have to recreate for the blog. It’s creamy, briny, cheesy, and loaded with crunchy dill pickles in every scoop. It’s totally delicious, and it’s a must-try if you love easy party appetizers!
It starts with a smooth cream cheese base mixed with ranch seasoning and sour cream for extra tang. Then in go the finely chopped pickles, sharp cheddar, and crispy bacon for a salty, savory finish. After a quick chill in the fridge, it turns into the kind of dip that disappears fast! If you want to add extra protein, you can easily swap the cream cheese for a natural yogurt.
Love a good appetizer recipe? Same! I think you’ll also like my pizza dip, mini bacon ranch cheese balls, bacon wrapped shrimp, bacon wrapped smokies, BBQ chicken wings, and taco ranch bites!

Ingredients
Note: I’ve included a printable recipe card at the bottom of this post, so you can add it to your folder at home!
-
Cream cheese: The creamy base that holds everything together. Make sure it’s softened so you get a smooth dip.
-
Sour cream: Lightens the texture slightly and adds tang so it doesn’t feel too heavy.
-
Ranch seasoning mix: Brings that herby, garlicky flavor that pairs perfectly with dill pickles.
-
Dill pickles (finely chopped): The star. Finely chopping them helps distribute that briny crunch throughout the dip instead of getting big watery chunks.
-
Shredded cheddar cheese: Adds sharpness and richness to balance the tang.
-
Cooked bacon: Salty, smoky, and honestly non-negotiable if you want the full viral dip effect!

How To Make The Viral Pickle Dip
-
Beat the cream cheese until completely smooth and creamy.
-
Mix in the sour cream and ranch seasoning until well combined.
-
Fold in the chopped pickles, shredded cheddar, and crispy bacon until everything is evenly distributed.

-
Cover and chill for at least 30 minutes before serving so the flavors can come together.

Storage
Store the pickle dip in an airtight container in the refrigerator for up to 4 days. Give it a quick stir before serving, as a little moisture from the pickles may settle at the top.

Recipe Notes
Pat the pickles dry with paper towels before mixing them in. This helps prevent excess moisture and keeps the dip thick and creamy instead of watery.
Finely chop the pickles so you get that briny flavor in every bite without big chunks throwing off the texture.
Let the dip chill before serving. Even 30 minutes makes a difference. The flavors settle in and it tastes so much better!

Variations & Substitutions
You can swap the sour cream for plain Greek yogurt if you’d like a little extra protein. It keeps that tangy flavor but adds a nutritional boost.
Pepper jack works great in place of cheddar if you want a little heat. You can also stir in diced jalapeños for an extra kick, or add chopped green onions for more freshness and crunch.
And if you’re leaning into the indulgent side of things, top it with extra crispy bacon right before serving. I love this one!
