The quickest way to cook a jacket potato is to just chuck it in the microwave, and that’s a totally acceptable option if you’re in a rush.
This method though is definitely worth trying if you have a bit more time on your hands, and access to an oven…
A floury potato is the best option for making a jacket potato. They also tend to come in larger sizes, which is great when your potato is going to form the basis of your meal. Look out for Maris Piper, Desiree, King Edward, and Melody varieties.
My personal favourite is Asda’s Extra Special Marabel. Many supermarkets now have packets labelled as ‘baking potatoes’, and these tend to be a good choice.
It’s also worth noting here that you shouldn’t overlook a sweet potato. They’re a great source of fibre and essential vitamins, and they can also shake things up a little bit if you’re looking to make lunchtimes more exciting!
Wash your potato, remove any gnarly bits, and prick it several times with a fork.
Pre-heat your oven to 180 degrees (fan).
Cook in the microwave for 3-4 minutes (depending on the size of your potato), then turn it over, prick again, and cook for a further 3-4 minutes. Test with a fork at this stage – it should feel soft all the way through.
Spritz the potato with Frylight or your favourite supermarket alternative, and then season with sea salt and freshly ground black pepper.
Bake your potato on a baking tray, in the middle of your oven, for 10-15 minutes, or until it’s golden brown and crispy.

Do note though that if you’re buying the frozen jacket potatoes that you’ll often find in the supermarket, these will usually have a Syn value. This is because they’re coated in oil. They can be handy if you’re in a rush, but I personally think that you can’t beat your own homemade version.
To make a satisfying meal though, you’ll want to add a topping. To make sure that you’re getting your Speed food, you can add a big leafy salad too.

Remember though that your Syn allowance is there for you to enjoy, and in the longer term, using it will ensure that you’re satisfied and that you can stick with the plan and get the results you desire.
Some people prefer to save their Syns so they can enjoy things like crisps, biscuits, or after dinner treats, and I definitely do this from time to time. But I much prefer using some of my allowance to make a meal that I’m really going to enjoy, that doesn’t leave me feeling deprived afterwards.

Jacket potatoes might become your go-to option when you’re eating out in a pub or a restaurant and following the Slimming World plan. There’s a few things that you need to know about in this respect.
First of all, the Slimming World site is your friend! Members can access the Syn values for many big chain eateries, so you can plan your meal in advance and choose an option that will keep you on plan.
If you’re going to a small independent place though, you’ll have to do your best with the information you have available. You can always ask that your potato is served without any butter, and if there’s a side salad, ask for the dressing on the side so you can use just as much as you want.
Be mindful too that toppings like tuna will often be laden with lots of mayo, so you may need to be generous when you’re accounting for your Syns.
