Slimming Chicken Jalfrezi
Ingredients
- 4 chicken breasts raw, diced
- 2 onions diced
- 2 red peppers cut into thick slices
- 2 cloves of garlic chopped
- 1/2 lemon juice of

- 1 400g tin chopped tomatoes
- 250 ml hot water
- Low calorie cooking spray
- Fresh coriander to serve
Instructions
- Heat a heavy based pan over a medium heat and spritz with low calorie cooking spray. Add the onions and garlic and fry for 2 minutes.
- Add the peppers and fry for a further 3 minutes.
- Add the chicken, Spicentice, and lemon juice, stir well, and cook for 2 minutes.
- Pour in the tinned tomatoes and hot water, stir well, and bring to a simmer.
- Cook for a further 25 minutes, or until the chicken is cooked through and the curry has reduced to the desired consistency. Make sure that you stir often.
- Serve, sprinkled with the fresh coriander, and enjoy!
