Slimming Chicken Jalfrezi

Packed with flavour, this chicken jalfrezi is a great option if you want to create a curry night at home.

Ingredients

  • 4 chicken breasts raw, diced
  • 2 onions diced
  • 2 red peppers cut into thick slices
  • 2 cloves of garlic chopped
  • 1/2 lemon juice of

  • 1 400g tin chopped tomatoes
  • 250 ml hot water
  • Low calorie cooking spray
  • Fresh coriander to serve

Instructions

  • Heat a heavy based pan over a medium heat and spritz with low calorie cooking spray. Add the onions and garlic and fry for 2 minutes. 
  • Add the peppers and fry for a further 3 minutes.

  • Add the chicken, Spicentice, and lemon juice, stir well, and cook for 2 minutes. 
  • Pour in the tinned tomatoes and hot water, stir well, and bring to a simmer. 
  • Cook for a further 25 minutes, or until the chicken is cooked through and the curry has reduced to the desired consistency. Make sure that you stir often. 
  • Serve, sprinkled with the fresh coriander, and enjoy!
