I love making a curry completely from scratch, but let’s be realistic here…

How to serve your curry
This Slimming World Thai green curry is perfect served with rice and a couple of wedges of lime.
Alternatively, cook up some egg noodles.
You’ll notice in the recipe that I use red pepper, mangetout, and baby corn, but if they’re not your favourites or you have other vegetables that need using up, don’t be scared to experiment a little bit.
You could add aubergine, asparagus, carrots, spinach, green beans, or pretty much any other veggies that you could think of!

Thai Green Curry
Ingredients
- 4 chicken breast fillets
- 1 red pepper
- 2 red chillis
- 2 onions
- 5 garlic cloves
- 150 grams mangetout
- 100 grams baby corn
- 400 ml light coconut milk
- 150 ml chicken stock
- 1 tbsp soy sauce
- 1 tbsp sweetener
- 1/2 lime
- 1/2 tsp salt

- Fresh coriander optional, to garnish
- Low calorie cooking spray
Instructions
Preparing The Thai Green Curry Paste
- Roughly chop 1 onion, deseed the chillis, and peel 4 garlic cloves. Put the ingredients into a blender with 2 tbsp water, 1/2 tsp salt, and the contents of Sachet 1 from your Spicentice Thai Green Curry Kit. Blend all ingredients together until the mixture turns into a paste.
Preparing The Curry
- Chop the chicken, pepper, and baby corn into bitesized chunks. Finely chop the remaining onion and garlic, and grate the rind of the lime. Squeeze the lime juice into a bowl, and prepare your stock.
Cooking The Curry
- Heat a large pan over a medium heat, and spritz with low calorie cooking spray. Stir fry the garlic and onion until softened.
- Stir in the curry paste and continue to cook for 2-3 minutes.
- Add the coconut milk, stock, contents of Sachet 2 from your Spicentice Thai Green Curry Kit, and bring to the boil.
- Add the chicken, peppers, mangetout, and baby corn, with 50 ml hot water. Lower the heat and simmer for 10-15 minutes.
- Add the soy sauce, sweetener, lime juice, and rind. Cook for a further 5 minutes, or until the chicken is cooked through.
- Season to taste, sprinkle with fresh coriander, serve, and enjoy!
