Preheat your oven to 350°F/175°C and line a couple of baking sheets with parchment paper. Set them aside.

In a medium bowl, mix together the cottage cheese, honey, and eggs until everything’s well combined.

Add the flour and baking soda to the bowl and mix again, scraping down the sides as you go to make sure it all comes together.

Gently fold in the chocolate chips until they’re evenly spread throughout the dough.

Using a small ice cream scoop or a spoon, scoop out the batter and drop it onto the prepared baking sheets, leaving about 3 inches of space between each one.

Bake for 10–12 minutes, or until the cookies are just starting to turn golden around the edges.
