Firecracker Chicken | Slimming World

How to serve your firecracker chicken
This firecracker chicken does all the talking in its own right, and it’s packed with speed veggies. So it’s best served simply with fluffy white rice.
I like to create a perfect little mound of rice and then serve the chicken around it.
To do this, simply spoon cooked rice into a small bowl, and pack it in tight. Then pop a plate over it, and flip the whole thing over. Gently remove the bowl, and voila!
Garnish with a wedge of lime, if you like, and a good grind of fresh black pepper.

Firecracker Chicken
Ingredients
- 4 chicken breasts cut into bitesized chunks
- Spicentice Firecracker Chicken mix from Spicentice.com - use code SLIMMINGV20 at checkout to save 20% on all orders
- 2 onions chopped
- 3 garlic cloves finely chopped
- 1 inch-sized piece ginger finely chopped
- 1 small packet sugar snap peas
- 1 red pepper chopped
- 1 lime juiced
- 1 bunch spring onions chopped
- 2 tbsp tomato ketchup
- 4 tbsp hoisin sauce
- 4 tbsp dark soy sauce
- 1 tbsp plain flour
- Low calorie cooking spray
Instructions
- Add the tomato ketchup, hoisin sauce, soy sauce, lime juice, 100ml water, and Spicentice Firecracker Chicken mix to a bowl, and mix well
- Add half the garlic, half the ginger, and the chicken to the bowl, and mix well. Set aside and leave to marinate for 15 minutes.

- Heat a wok over a medium to high heat. Add the remaining garlic and ginger, and stir fry for a few seconds.
- Scoop the chicken out from the marinade and stir fry until the chicken is almost cooked through.
- Add the flour to the leftover marinade and whisk well. Add to the wok with 100ml water. Bring to a simmer, and then add the peppers, onions, and sugar snap peas. Stir fry for 5-10 minutes.
- Garnish with the spring onion, serve, and enjoy!
