Course: Breakfast

  • 2 eggs
  • 1 Schar White Ciabatta Roll
  • 4 tbsp tinned chopped tomatoes
  • 30 grams parmesan cheese grated
  • 1 spring onion chopped
  • 1 rasher lean bacon visible fat removed, chopped
  • Low calorie cooking spray
  • Fresh parsley or dried chilli flakes optional, to garnish

  • Preheat your oven to 180 degrees. Cut your Schar ciabatta into 4 'soldiers', and bake in the oven for 5 minutes. Remove from the oven.
  • Meanwhile, heat a frying pan over a medium heat, spritz with low calorie cooking spray, and cook your bacon. Don't allow it to get too crispy, as it will be going in the oven.
  • Spoon the tinned tomatoes evenly over your ciabatta soldiers. Sprinkle over the grated cheese, then add the bacon and the spring onions.
  • Return your ciabatta soldiers to the oven for around 5 minutes, or until the cheese has melted.
  • Meanwhile, soft boil your eggs by adding them to boiling water and boiling for 5 minutes. Remove from the water and run under a cold tap so they're cool to the touch.
  • Pop your eggs in egg cups, and add the ciabatta soldiers to the plate. Sprinkle with chopped parsley or dried chilli flakes if you like, and enjoy!
